Stuffed Acorn Squash with Apple, Sausage and Cornbread

When it comes to fall produce, we are guilty of overlooking those little green acorn squash in favor of others: spaghetti squash, butternut squash, or perhaps the elusive delicata squash. But Stephanie from Sweet Savory and Steph is redirecting our attention to these little guys. Acorn squash taste nutty and mild enough to hold a sweet and savory (see what we did there?) stuffing with apples, cornbread – and yes, sweet Italian sausage!
